Taco shop to open in downtown Largo

Co-owners Kimberly Platt and Chris Carnes recently announced that they will be opening Charlie Tulum’s Taco Shack in the former location of the Deli Diva sandwich shop in downtown Largo. No doubt they will be using banner printing to make the community, particularly those who were loyal patrons of the deli, aware of the new restaurant and its offerings.

The taco shack, named after the turtles on Tulum Beach in Mexico, will be opened Monday through Friday from 11:00 a.m. until 3:00 p.m., the same hours that the deli was opened. In addition, the co-owners will be running a taco bus that will remain at the shop during the weekdays and travel to events on the weekends. The business will be rather unique in that their tacos will be stuffed with a variety of unconventional fillings.

Platt is currently in culinary school and Carnes once owned a taco window on Indian Rocks Beach and have known each other for over 20 years. They came together when Carnes mentioned to Platt that he needed a new partner for a taco business he was looking to open in Largo. The two met with the owners of the deli shop and were immediately captivated by the property and decided to open a restaurant there.

According to Platt, their initial intentions were not to open a brick-and-mortar restaurant but at this point the plan feels just right. They are both very excited about the community and hope the restaurant will be their way of being able to make their contribution to it once it opens in October.
