Santa Ana to learn from expert butchers

Residents in Santa Ana are sharpening their knives and honing their appetites in anticipation of the Electric City Butcher’s Pork 101 Butchery Class. The workshop is an intro to basic meat cutting skills.

First started in 2014, the Electric City Butcher Shop was founded upon the model of old Sicilian butcher shops. They build relationships with sustainable farmers and source their meat locally, also establishing strong ties with the Santa Ana community in the process. Their classes dealing with preparing and cooking meat are part of that community outreach effort.

The Pork 101 class will start by pulling out a half of a pig and covering how to identify which parts are used for which cuts, including popular cuts like chops and rump roast. The instructors will then go over how to make basic cuts, how to use a knife, and seam butchery.

After the demo is over, the attendees will participate in cutting up the pig into its various parts. Afterwards, participants will receive some promotional products, including about four pounds of pork, as well as coupons for the Butcher Shop.

Pork 101 will be held on March 9 from 8:00 to 10:00 pm at the Electric City Butcher Shop, located at 201 E. 4th St. The price to attend has not been confirmed as yet, but anyone interested in more information should contact Electric City directly.
