Florence seeks food service providers for specially planned workshop

Food entrepreneurs from florence, and the surrounding Kentucky communities, who are interested in taking their business to the next level may wish to make plans to attend an upcoming event.

Small Bites 01: Food Costing and Cost Controls, will provide both and introduction to these topics for people new to the industry, and also serve as a refresher for those who have been in it a long time. Participants will be taught steps they can take to control costs in their establishment, including using standard recipes and portion sizes, inventory control, and managing labor and overheads. They will learn how to use a recipe costing worksheet, and the various forms of sales channels ranging from catering, to mobile food service establishments and brick-and-mortar operations will be discussed as well.

A portion of the event will be allocated to a panel-style discussion, where experienced chefs and other industry experts will be able to provide real-life example of why costing is important, share their secrets of how they make it work for them, and also the pitfalls to avoid. There will be time for questions and answers, and these are highly encouraged. Digital copying can be used to prepare instructional manuals for each person who registers to participate.

This workshop has been planned for June 5 in Newport’s Incubator Kitchen Collective, and it will be the first of six that will take place. People can choose to attend just one or as many of them as they wish.
