Cereal restaurant looks to bowl Louisville over

Eric Richardson, an entrepreneur and ex-fitness trainer from Louisville, will soon be opening his own cereal restaurant called The Cereal Box.

Richardson had known when he began planning the cereal restaurant four years ago that he had wanted to provide a unique food experience for his area. He explains:

“I knew it was something different and quirky enough that it would work in the Highlands. There are so many things you can do with cereal that I had never seen or heard of.”

The Cereal Box will allow customers to watch cartoons such as Looney Tunes and SpongeBob SquarePants while they choose from a selection of more than 20 cereals, a variety of different toppings and milk, and special items such as cereal milkshakes and Rice Krispie Treat sundaes.

Although there is no information yet about the opening date or operating hours, Richardson plans on keeping the restaurant open all week with Thursday, Friday, and Saturday being days where The Cereal Box would remain open until 3:00 am. The eatery is expected to hold around 15 to 20 people with additional seating on the outside, and will be located at 612 Baxter Avenue next to Spinelli’s Pizzeria.
