Raleigh chef has restaurant rethink

Samad Hachby recently shut down his Moroccan restaurant Babylon, located on North Dawson Street, and is about to open Mulino Italian Kitchen in the same space.

Having run Babylon for over five years, Hachby says he has wanted to serve Italian food because of his life experiences, but has been waiting for the right time.

Hachby was raised in Morocco but went to school in Italy, before coming to the United States. He speaks five languages, including Italian, has worked for five years on an Italian cruise ship, and has always enjoyed Italian cuisine.

His plans were cemented after he traveled to Morocco and Italy recently. In Assisi, which is in the Umbria region of the country, he discovered a restaurant called Osteria del Mulino, and fell in love with it. He ate there three or four times so he could understand the theory behind the restaurant’s food, which centers of good techniques and ingredients.

In order to make sure his new venture works, he invited Ilaria Menzolini, Osteria del Mulino’s chef, to come to Raleigh and help him develop the menu, which will feature homemade pasta, pizza baked in a wood-fired oven, and other entrees.

Fans of Babylon need not despair, because Hachby hopes to reopen Babylon in a different location.

Mulino opens today, April 18. Ventures like this can benefit by working with a flyer printing company to create a handout announcing their opening.
